Brioquill started in a rented kitchen in 2019 with one rack and a starter named Gertrude. The dough ferments cold for 36 hours, which is the whole secret and the reason we cannot make more.
Cafe coffee is pulled from a two-group machine. Pastry sells out in the order it comes out. The preorder counter holds a third of every bake so a regular never drives across town for nothing.

Wheat, milk, eggs and tree nuts (walnut, almond) are all handled daily. Sesame appears on one seeded loaf. We cannot promise a nut-free or gluten-free item, and we say so plainly at the counter.
